A Personal Note
Dear Artisans,
If you love Krug, you already know what you want from Champagne: richness, power, a creamy texture, and the feeling of a wine that has been given time.
Now think of that style across the board, in four bottles from one family in Bouzy. Wine Spectator on the Paul Bara Brut Réserve: “A creamy Champagne, offering concentrated flavors of mandarin orange preserves, dried white cherry and grated ginger, underscored by a streak of salty mineral.”
Krug Grande Cuvée is $259.99 on our shelf, and worth it. That Bara is $59.99. For the Thanksgiving table, it may be the most sublime pairing we have.
Bouzy And Bara
The village of Bouzy and Champagne Paul Bara are practically synonymous. The Baras make their wines by hand, with low-yielding vines, and good maturity is ensured by prolonged bottle aging. Their vineyards are all rated 100% Grand Cru, 11 hectares of them, because they own no other parcels.
The style is rich, powerful and balanced, centered on Pinot Noir from Bouzy’s warm, south-facing slopes. Only free-run and first-press juice goes in, and the wines rest in cold, extremely deep cellars until they are ready. Andrew Jefford calls them “essential references for anyone who wants to enjoy and understand the ripe, dry richness of Bouzy.”
Why Growers Are The Greatest Steals
Growers hold close to 90 percent of the vineyard land in Champagne. The great houses own only about a tenth of it and buy most of their grapes from those growers. Most growers sell their fruit upstream, where it goes into famous blends.
A few keep it and bottle it under their own names. Same Grand Cru dirt, a different name on the label. The houses spend on the brand and the global distribution that built their reputations. Growers do not, and you can taste where that money stays.
Prices That Barely Move
Paul Bara’s prices have hardly shifted in decades, while the quality has only continued to rise. Here is the receipt from our own files: in December 2022, I sold you the Rosé Special Club at $159.99. Today’s 2019 is $159.97. Four years, and the price is two cents lower.
The Grower’s Prestige Tier
In 1971, a dozen growers created their own answer to the houses’ têtes de cuvée: Club Trésors de Champagne. A Special Club is made only in exceptional years, and an expert panel of oenologists and growers has to approve it twice, first as still wine and again as finished Champagne.
Bara’s two Special Clubs are the top of this email, and starting with the 2004 vintage, Bara made the first rosé in the history of the Club.
A Sublime Thanksgiving Pairing
Pour the Brut Réserve when the first guest walks in, with scallops or shrimp. The Grand Rosé carries Bouzy Rouge and creamy raspberry, so it goes straight to the turkey and cranberry, then on to the tarte tatin. The winery’s own pairing for the Special Club Brut is duck with cranberry sauce. And the Special Club Rosé, with its fruitcake, pound cake and cardamom, is a pie-table Champagne if there ever was one.
Cheers,
James Tran

This is where to start if you love Krug: Pinot-led, long on the lees, and “lush and fully developed.” Pour it when the first guest walks in, or with scallops and shrimp.
Wine & Spirits · 94 Points
Pinot noir provides 80 percent of this blend, chardonnay the balance, both from the clay-limestone soils of Bouzy … . The wine fermented in stainless steel and did not undergo malolactic conversion; then it aged for six years in bottle on the lees. It’s an ornate Champagne, lush and fully developed on one hand, brisk with chamomile and lotus-root scents on the other, and creamy with bright notes of yellow rose, white peach and corn silk. Full-on delicious.
Tyson Stelzer · 93 Points
In these days of ever lower dosage, here’s evidence that a little more sweetness can sometimes be a blessing, especially in the presence of malic acidity, even in a village as exuberant as Bouzy. A stark contrast to the Extra Brut, a little more dosage lends more lift to its red fruit core, and a more honeyed feel to its structure, lengthening the finish.
Wine Spectator · Alison Napjus · 91 Points
A creamy Champagne, offering concentrated flavors of mandarin orange preserves, dried white cherry and grated ginger, underscored by a streak of salty mineral. Well-balanced, with a lip-smacking finish.
Vinous · Antonio Galloni · 90 Points
The NV Brut Réserve is bright, focused and full of character. White flowers, plum, red cherry fruit, spice and peel all grace this crystalline, nuanced Champagne from Paul Bara.

Bouzy is famous for its still red wine, and a dose of it gives this rosé its color and its strawberry and cranberry fruit. That is the turkey and cranberry course, and the winery also pairs it with tarte tatin.
Decanter · 96 Points
(80% Pinot Noir, 20% Chardonnay) Enticing creamy raspberry and ground almond notes which propel over the pink grapefruit acidity and gorgeous glowing, silky mousse. Delicate with a crushed red fruit ending.
Tyson Stelzer · 94 Points
A beautiful rosé that shines with the bright intensity of Bouzy pinot noir and the crystalline definition of salt minerality zapped with tangy malic acidity. A dose of 12% Bouzy rouge lends but a hint of pink to its delicate, pretty, bright straw hue. It's a wonderful expression of the character of Bouzy translated with detail and finesse, filled with strawberry and cranberry fruits and fragranced with rose petals of lifted, lively character. Fine tannin structure melds with salt minerality to provide grip and structure in unison with tangy and persistent malic acidity. It's thrillingly primary and enticingly moreish, with just subtle allusions of ginger-cake spice beginning to appear on a long finish.
James Suckling · 93 Points
Attractive fruit with sliced-strawberry and apple aromas and flavors. Medium-bodied with fresh apples and citrus as well as touches of heather and bread dough. Tangy at the end.
Vinous · Antonio Galloni · 92 Points
The NV Rose Brut Grand Cru is another gorgeous Champagne from Paul Bara. Rich, resonant and super-inviting, the Brut Rosé has so much to offer. I especially admire the wine's breadth and expansiveness, both of which give it the versatility to drink beautifully as an aperitif or at the dinner table.

Vinous · On The 2015 · 94 Points
The 2015 Special Club is one of the more powerful, vinous Champagnes in this range. It offers up a beguiling mix of orchard fruit, white flowers, chalk, mint and white pepper, all backed by considerable volume and substance.
Kermit Lynch · Clark Z. Terry · Importer’s Note
Each year, the Special Club represents the pinnacle of the Bara process and style. Superlatives seem to be insufficient when describing the experience of savoring a glass of this Champagne. It simply has it all—refined hazel-nutty, toasty notes, bright acidity, some of the most delicate bubbles ever created, and a finish that lasts and lasts (sometimes longer than the bottle does)

Bara’s rosé was the first in the history of the Club Trésors. 70% Pinot Noir including 12% Bouzy Rouge, 30% Chardonnay, 7 g/L. Fruitcake, pound cake and cardamom make it a Champagne for the pie table.
James Suckling · 93 Points
Ambitious style for rosé, very toasty and spicy, showing walnuts, redcurrants, lots of violets and raspberries. Fine bubbles are tight and savory. Light- to medium-bodied with elegant texture despite the phenolics.
The Winery’s Note · Tasting Note
The nose, dominated by a pastry note, expresses perfect maturity, with aromas of fruitcake and pound cake and touches of fruit jam (apricots and chutney). One can even detect a light spicy presence reminiscent of cardamom. In the mouth, it is full and generous, offering a garland of surprising flavors dominated by ripe and candied fruit that linger right up to the finish.

Old-fashioned know-how: manual grape-stomping and long maceration on the Pinot, 40-year-old vines, 30% reserve wines, unfiltered, aged in 19th-century cellars. Decanter calls it “a rosé for the table.”
Vinous · Antonio Galloni · 94 Points
The NV Brut Rosé Premier Cru is fabulous. Rich, ample and beautifully resonant in the glass, the Premier Cru dazzles from the very first taste. Unlike the Blanc Premier Crus in this range, the Rosé has more body and textural intensity, all of which make for an absolutely compelling wine. I love the vinous intensity here. Orange peel, raspberry and kirsch linger on the Pinot-driven finish. In a word: sublime.
Decanter · Tom Hewson · 93 Points
More vinous, savoury and involved than the Rosé Vertus, this multi-vintage rosé plays on wistful, fragrant dried apple, rose and crab apple with delicate spice and beautifully subtle ageing complexity. It's far from heavy or deep as a style, but the light and shade in flavour place it more as a rosé for the table, retaining the smooth, settled mousse and flowing texture all these wines trade on.
Wine Spectator · Alison Napjus · 92 Points
There's a lovely, creamy viscosity to this elegant rosé Champagne, carrying the finely meshed flavors of steeped cherry, candied pink grapefruit zest, graphite and spice. Fresh and balanced.

Another grower: Maison J. Lassalle owns all of its vineyards, and ages each cuvée for at least five years. Wine & Spirits says to pour it with a salad of duck confit, which tells you how it will handle the holiday table.
Vinous · Antonio Galloni · 92 Points
The NV Brut Rosé 1er Cru is a pretty rich wine, especially for this address, where the Champagnes are often quite lithe. Deceptive in its mid-weight structure and overall feel, the Rosé offers quite a bit of intensity and persistence. Rose petal, cranberry, mint, citrus and white pepper all add attractive aromatic top notes. In this release, Lassalle's Rosé is a Champagne of real substance and textural depth.
Wine & Spirits · 92 Points
This is mostly red grapes (70 percent pinot noir and 15 percent meunier), gaining its pale pink color from six percent of that pinot noir as red wine. In addition to the color, those grape skins bring scents of cherry blossoms and cherry leaf, the ample, violet-tinged fruit meeting austere tannins in the end. Pour it with a salad of duck confit.

There's an open-knit, almost airy feel to this vibrant Champagne, which carries a concentrated range of juicy pear and black raspberry fruit, with hints of crystallized honey. Shows gingersnap biscuit and verbena flavors on the chalky texture, gaining momentum on the racy, zesty finish.

The Bottom Line
The Krug style, at grower prices.
Paul Bara makes 100% Grand Cru Champagne by hand in Bouzy, and the prices barely move. The Brut Réserve at $59.99 and the Decanter 96 Grand Rosé at $66.99 are the two to open at Thanksgiving.
The Special Clubs at $134.99 and $159.97 are for the moment you want the prestige tier without the prestige price. Add a Kermit Lynch bottle or two from further down, and the holidays are handled.
