The philosophy of Maison J. Lassalle is based on several key points:
- Maison J. Lassalle owns all of its vineyard. The latter is based on one and the same terroir located at most 10 km from our farm.
- Each step of the winemaking process is based on a carefully respected ancestral technique.
- Each cuvée produced is aged for a minimum of 5 years in order to reach the level of quality requirement that Maison J. Lassalle has set for itself.
- Beautiful midsummer night's dream, passionate evocation of a mythic effervescent wine. Sensations, emotions, surprise, rare moments.
The color is pale pink, delicate, effervescent; the first nose evokes liquorice, the signature of Pinots Noirs with good maturity. Then the red fruits (strawberry, cherry) appear subtly in a soft and sensual range. The mouth expresses a very beautiful minerality (salinity), a balance operates between a slight astringency and a crystallinity linked to the composition of the wine. The posture of the wine is ample and upright, giving it a beautiful personality.

"An exceptionally pretty nose combines notes of brioche, strawberry and cherry along with a whisper of quinine. There is a lovely sense of verve to the almost foamy medium weight flavors that possess better than average depth in the context of what is typical for rosé champagne, all wrapped in clean, reasonably dry and nicely crisp finale. Overall this is really quite good because many examples are mildly sweet but here the finish remains sufficiently dry that it's not at all cloying." (Oct 2019)

"The NV Brut Rosé 1er Cru is a pretty rich wine, especially for this address, where the Champagnes are often quite lithe. Deceptive in its mid-weight structure and overall feel, the Rosé offers quite a bit of intensity and persistence. Rose petal, cranberry, mint, citrus and white pepper all add attractive aromatic top notes. In this release, Lassalle's Rosé is a Champagne of real substance and textural depth. "This is mostly red grapes (70 percent pinot noir and 15 percent meunier), gaining its pale pink color from six percent of that pinot noir as red wine. In addition to the color, those grape skins bring scents of cherry blossoms and cherry leaf, the ample, violet-tinged fruit meeting austere tannins in the end. Pour it with a salad of duck confit."
