The philosophy of Maison J. Lassalle is based on several key points:
J. Lassalle works with 11 hectares of vineyards in Champagne, all of them of Premier Cru status. This non-vintage brut is grown in Chigny-les-Rose and composed of 60% Meunier, 20% Pinot Noir and 20% Chardonnay. With three years sur lies, this is fresh, fruity, creamy, and toasty. Dosage of 9g/L balances the acidity and gives the wine some richness

- Each step of the winemaking process is based on a carefully respected ancestral technique.
- Each cuvée produced is aged for a minimum of 5 years in order to reach the level of quality requirement that Maison J. Lassalle has set for itself.

There is fine complexity to the utterly delicious flavors that possess reasonably good concentration, indeed sufficiently so that there is a sappy, even creamy texture to the mid-palate that carries over to the lingering finish. This will not wow you with its refinement as the mousse is not especially fine yet it's rare to find this kind of depth anywhere close to this price point.
