Chives are the smallest member of the onion family. This herb which originated in northern temperate zones has a light, onion, aroma and a spicy, onion flavor.
Chives have such an agreeable taste and fresh appearance that it is almost impossible to over use them. Chives can be added to dishes that are being cooked for a short time like omelets, scrambled eggs, and white sauces since prolonged heat will quickly dispute their taste.
