About the Winery:
Our foremost wine is Brunello di Montalcino, which has over the years won widespread acclaim in Italy and abroad. To obtain a truly exceptional wine we have adopted the traditional approach, with ageing in Slavonian oak for at least 36 months. What counts for the production of our Brunello is the quality of the harvested grapes. When climate and growing conditions do not allow for absolute excellence, we devote the entire grape crop to the production of Rosso di Montalcino, which we also make if the harvest is particularly abundant.

Winemaking:

Vinification takes place in the winery's cellar, located next to the vineyards, in 40-35 hectoliter stainless steel vats and typically lasts 28-30 days, depending on the vintage. Fermentation occurs spontaneously in the days following the harvest in non-air-conditioned rooms, requiring frequent pumping over throughout the day and often using délestage to cool the wine that's boiling in other tanks.

Tasting Notes:

The unique soils from which our Rosso di Montalcino grows—its altitude, exposure, and resulting microclimates—give the wine intense aromas of forest floor, with distinct notes of red berries and ripe cherries, along with elegant notes on the palate and nose resulting from this perfect combination of factors. The ruby color varies greatly from vintage to vintage, varying in intensity depending on the ripeness of the skins and the release of anthocyanins during fermentation. It pairs well with traditional Tuscan meat dishes and grilled meats, and its freshness also pairs well with cheeses. Despite popular demand, our Rosso di Montalcino is only produced in years when we have a greater harvest yield, or when the wine's characteristics are not suitable for Brunello. For these reasons, our Rosso di Montalcino vintages are not consistent.

Ratings & Reviews

93 Points - Robert Parker's Wine Advocate:
"The excellent Salvioni 2021 Rosso di Montalcino La Cerbaiola offers very smooth balance with forthcoming aromas of red fruit, dried cherry and pressed violet or lilac. There is a good duality here between primary fruit and delicate floral nuances. The mouthfeel is crisp and tight, with a focused approach that sets this wine up for chicken or pork roast. This Rosso stands out for its jovial character." - Monica Larner (Mar 2024)

92 Points - Vinous Media:
"Woodsy and slightly smoky in the glass, the 2021 Rosso di Montalcino from Salvioni wafts up with a savory bouquet, mixing rosemary with fresh-picked raspberry, ground ginger and sage. It opens with a lovely inner sweetness and juicy acidity, all balanced by masses of tart wild berry fruit and licorice traces that saturate the palate with youthful concentration. While structured, its tannins are perfectly formed and harmonious, creating a tactile framework as hints of violet pastille slowly taper off. The 2021 is simply stunning, balancing warm vintage fruit against a core of boundless energy. Frankly, it's hard to stop at one glass. (Drink between 2024-2030)" - Eric Guido (Dec 2023)
