About the Winery: 
The Pio Cesare winery was founded in 1881 by Cesare Pio, one of the very first wine producers to believe in the great potential and quality of Barolo, Barbaresco, Barbera and other great wines of Piemonte. For five generations, the Pio Cesare family has been producing traditional Piemontese wines in its ancient cellars, and consistently receiving high scores from all reviewers. Today it is run by the genial Pio Boffa, great-grandson of Pio Cesare, his nephew Cesare Benvenuto, and, since 2016, Boffa’s daughter Federica, who represents the fifth generation.

Notes from the Winemaker:
For about 21 days, small pieces of bark of China Calissaia and China Succirubra are left to macerate in an infusion of alcohol and very little quantity of our "classic" Barolo. We then add a blend of flavoring spices including gentian root, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and others, which make up our "historic" Family Recipe.

Finally, the right dose of our "classic" Barolo, a little sugar and alcohol is added to the aromatic extract thus obtained and left to age for at least 4 months in small stainless steel containers. After resting in the bottle for at least 2 months, our Barolo Chinato is ready to be tasted in the "Piedmontese way", i.e. after meals as a digestive.

"The Pio Cesare NV Barolo Chinato pours from the bottle with a dark amber color with shiny chestnut highlights. This fortified digestif shows amazing purity and intensity, with aromas that you can list and identify clearly one by one. There is balsam and medicinal herb with minty cough syrupy, cola and candied orange peel. With time, you might also sense some Moroccan spice or toasted Spanish cedarwood. The alcohol content is registered at 16% although it surely feels much higher. Balanced sweetness wraps smoothly over the palate. I'm never quite sure how to assign a drinking window to Barolo Chinato, and it is ostensibly built to last forever." - Monica Larner (Jun 2021)

"A rich but transparent amber, the NV Barolo Chinato reveals notes of blood orange, baking spice, mocha, and rosemary, followed by a medium to full-bodied red with sweetness and delicate, attractive bitterness in its hints of tea leaf and orange peel.
