About the Domaine:
For almost five hundred years, the Philipponnat family has left its mark on the soil of the Champagne region. Generations have cultivated the land at Ay, the family's home since the time of Apvril le Philipponnat who owned vines at Le Léon, between Ay and Dizy, in 1522. In the 16th century, the family’s ancestors were winegrowers and merchants, suppliers to the court of Louis XIV, magistrates and Royal Mayors of Ay - a town which was directly dependent on the Crown since the era of the Counts of Champagne.
Philipponnat was the first Champagne House to indicate the main year used in its non-vintage blends, the dosage and the date of disgorgement on back labels, informing consumers and wine experts of the characteristics of each cuvée.
Tasting Notes:
Like its alter ego, Réserve Perpétuelle Non Dosé gives pride of place to Pinot Noir. With no added sugar in the dosage, its palate is straightforward and lively, expressing the style of the House with the utmost transparency. Its candour and precision have earned it lasting success among the world’s top chefs. It distils all the qualities of the wine, often with notes of white fruit and citrus fruit.
TO THE EYE Pale gold in colour. Fine, persistent bubbles.
TO THE NOSE The nose presents lime blossom, vine flower and hawthorn.
TO THE MOUTH The palate is straightforward and pure, with citrus notes and a lovely liveliness that is not aggressive. The finish is long and clear, with notes of warm bread and fresh apple.
Food Pairing: Serve chilled but not iced (8°C) for a refreshing aperitif. An excellent match for raw fish, seafood and Japanese cuisine.
Technical Information
The Blend:66% Pinot Noir, 32% Chardonnay, 2% Pinot Meunier.
Vinification:
First press of grapes from the heart of the Champagne region, mainly from the Grands Crus and Premiers Crus around Mareuil-sur-Ay. Traditional vinification in vats and wooden barrels, avoiding any premature oxidation. 26.8% of the wines from the 2021 harvest were produced without malolactic fermentation. Undosed (0 g/l) to avoid masking the wine’s character and purity.
Ageing:
Aged on lees in the House cellars at a constant temperature of 12°C for a minimum of three years – much longer than the legal minimum of fifteen months..

It bursts from the glass with aromas evocative of green apple, lemon leaf and delicate early-blooming white flowers. On the palate, it is medium- to full-bodied and vibrant, driven by incisive acidity and concluding with a chalky, bone-dry finish.
