Notes From the Winemaker:
Launched with the 1990 vintage in 1993, Bin 407 was developed in response to the increasing availability of high quality cabernet sauvignon fruit. Inspired by Bin 707, Bin 407 offers varietal definition and approachability, yet still with structure and depth of flavour. Textbook cabernet sauvignon, the varietally expressive Bin 407 highlights the rewards of Penfolds multi-region, multi-vineyard blending, with a core of ripe fruit supported by sensitive use of French and American oak.

Tasting Notes:
In the glass, a deep, lively red. The nose boasts fragrant violet, lavender, blue fruits and the faintest waft of red apple blossom. And yet there’s much more to captivate the olfactory senses, with scented illuminations of Danish pastry/croissant and rye bread crust.  There are also notes of thyme, oregano, pulped olive. and new-buck leather. This wine is juicy with redcurrant jelly, dark plum (and plum acidity), fresh rhubarb. The tannins are well-ntegrated, and the oak iseamlessly hidden, melding beautifully with the fruit.

Technical Information

2019 Vintage:
The South-East growing districts of South Australia enjoyed above-average winter rainfall, while McLaren Vale and the Barossa Valley recorded well below-average. September temperatures were cool with little rainfall resulting in some isolated frost events. Summer was generally hot, with high temperatures delaying veraison. The Barossa Valley experienced 31 days of temperatures exceeding 35°C, while Coonawarra experienced 20 days of temperature greater than 35°C during the months December to March. Irrigation was crucial to keep vines in good health. The proximity of the Southern Ocean played an important role in moderating temperatures in Coonawarra and Padthaway, allowing for a high-quality harvest, albeit with smaller yields than average. Although yields were lower, the quality was outstanding with cabernet sauvignon displaying excellent colours, firm tannin profiles and intense flavours.

Showing note-perfect varietal aromas, with a breeze of ripe purple fruit over fresh, leafy herbs and rich red earth, the perfume is full and persistent. The entry is sharp and arresting, with fruit purity on point and channeled down the right corridors by supple tannins and a clean acid seam. 94 Points - James Halliday:
Padthaway, Coonawarra, Wrattonbully, McLaren Vale and Barossa Valley fruit. Matured 12 months in 27% new French and 8% new American oak hogsheads. Nuances of menthol and eucalypt not often seen in Bin 407, perhaps the presence of Padthaway taking a stronger lead this vintage? This might also be the explanation, too, for a more saline feel to the palate. All the classic blackcurrant, cassis and roast capsicum expected of Bin 407 hold through a finish of impressive line and length, sustained by strong, fine-grained, mineral tannins. (TS) (8/2021)

"Polished from top to bottom, this red boasts fine-grained tannins, offering a generous core of blackberry and cassis flavors that show accents of cured black olive, sandalwood and vanilla-laced cedar, with a whiff of peppermint and dried sage, all harmonious on the long finish. An amalgam of redcurrant and blackcurrant aromas with cedary and leafy tones, dark berries and pepper and plenty of oak strut. The palate has a deep vein of black-fruit flavors, as well as plum and chocolate. Bold extract. A blend of Padthaway, Coonawarra, Wrattonbully, McLaren Vale and Barossa Valley. Drink now. Screw cap.

93 Points - Vinous:
Dark magenta. Ripe cherry, cassis, cracked pepper and incense aromas are complemented by suggestions of menthol, pipe tobacco and woodsmoke. The 2019 Cabernet Sauvignon Bin 407 shows firm tension and power in the mouth, offering sappy red and dark berry, vanilla, rose pastille and spicecake qualities and a sweetening cola nuance that emerges with aeration. Juicy and energetic on the long, gently chewy finish, which features well-knit tannins and lingering spice and bitter cherry notes. Raised in a combination of French and American oak hogsheads, 35% of them new. (Drink between 2026-2038)
