Notes from the Winemaker:

Very gentle direct pressing from 2 to 5 hours - Cold moderate setting (6-8 ° C) from 24 to 48 hours. Slow fermentation at controlled temperature, 15 to 18 ° C to preserve the aromas and ensure a beautiful complexity - no malolactic fermentation.

AGEING:
In vats on lees for 4 months with stirring if necessary to maintain a certain reducing environment, and gain roundness.

GRAPE VARIETIES: 35% Grenache Blanc, 20% Clairette 20% Roussanne, 15% Viognier and 10% Bourboulenc

 

Tasting Notes

Appearance:
The dress is light and crystalline, very pure with discreet green reflections.

Nose:
Rich and complex nose expressing the plurality of grape varieties. Exotic and citrus fruits blend with apricot and white peach with floral notes and white pepper.

Palate:
The mouth balances the expression of the fruit, the freshness and the roundness typical of our southern Côtes-du-Rhone. The delicate touch of bitterness in the final brings an extra dimension to the tasting, the touch!
