About the Distillery:

Carefully crafted and cask-perfected at The GlenAllachie Distillery in Speyside, our peated single malt serves up a sweet smoke style impeccably balanced with the heather honey character of our distillate.

Guided by revered Master Distiller, Billy Walker, our team is on a ‘Meikle Tòir’ (meaning ‘big pursuit’). The goal: To carefully craft and cask-perfect a peerless peated single malt at our Speyside home, The GlenAllachie Distillery.

About the Whisky:

Made using mainland peat from St. Fergus, the sweet phenolic content of the whisky amounts to 35 PPM. A lengthy fermentation period of 160 hours results in a fruit-forward spirit that lends itself perfectly to ageing in American oak ex-Bourbon barrels, followed by Pedro Ximénez & Oloroso Sherry puncheons.

Tasting Notes

Nose: Cedarwood, cigar box, butterscotch and mocha, with orange peel, honey and plum jam.

Taste: Dark chocolate, smoked honey and mocha, with figs, treacle, burnt sugar and puffs of peat smoke.

"Chocolate brownie, smoked orange disc, ground cumin, mild smoked paprika, gentle peat smoke, and a dusting of cocoa on the nose of this gem of a whisky matured in Pedro Ximénez and oloroso sherry puncheons. On the palate, dark chocolate slides in with smoke, blackberry, burnt sugar, treacle, espresso, maple-coated pecans, and sizzling spices. Melted chocolate, peat smoke, plum skins, and baked orange on the finish."

"This is a lovely little dram in glass, reflecting some richer, reddish-golden brown color from the sherry cask influences. Leg structure and viscosity are showcased beautifully. Sherry and peat notes make a delectable impression on the nose, giving rich aromatics of smoke, dry fig, chocolate brownie, caramel, and toffee crunch. This spreads in a lovely, smoky way across my palate, delivering alongside this essential flavor hints of chocolate brownie, raisins, burnt sugar, figgy pudding, and vanilla. The smoke on this in the finish is present to the last moment, fading into some sweetness, and then both drop away."
