About the Whiskey:
By using our expertise in creating our delicious flagship bourbon, we tweaked our recipe and upped the wheat and kept the corn at the minimum. The result? A liquid that allows for each ingredient to not only shine on its own but highlights what happens when success meets craft.

Tasting Notes:
A smooth and layered whiskey aged for a minimum of 5 years. This one is for the wheaters.
Aroma: Toffee, vanilla ice cream, caramel and floral notes
Taste: Cream, toffee, vanilla, toasted almonds, clove

Slow Cut Proofing:
All bourbon is taken out of the barrel at cask strength. It's then "proofed" with water to bring it to bottle strength. Traditionally, this process takes 24-48 hours. However, we choose to do it for significantly longer at very small increments.

WHY?
When you add water to alcohol, heat is generated. At a distillery scale, it's hundreds of gallons at a time which creates enough heat to literally boil off some of the lighter, finer flavors. Our choice is to extend the life of the proofing time by adding the same total amount of fresh Colorado mountain water over multiple weeks (instead of days) to keep the bourbon cool, allowing us to bottle every last drop of flavor.

Mashbill: 51% corn, 45% wheat, 4% malted barley

"Containing 45% wheat, the producer bills this as “an extreme wheat bourbon.” So how does it drink? Caramel and mocha lead, followed by a lemon-peel hint into the cinnamon and clove finish. Adding water soothes the heat but keeps the caramel on this 100-proofer, and allows tinges of butterscotch and vanilla cookie to ride the exhale."

"The nose is light, sweet, and mildly chalky, like talcum powder or freshly whipped meringue; it also has pistachio pudding and hints of flavored tobacco. On the palate, embers burn gently beneath apple, almond, and milk chocolate, with a pleasantly silky mouthfeel.
