Didier Lemorton is the sixth generation at this small farm in southern Normandy's Domfrontais region. The Lemorton family has over fifteen varieties of pears planted on the property and uses anywhere from 60% to 80% pears in their cider, which is distilled one time by a traveling alambic in the early fall. The spirit then rests in well-seasoned 600 liter casks, some of which have been on the property since before the second World War.

The Lemortons distill their cider after aging it for eleven months in oak barrels. Distillation takes place in their own alambic, a single-distillation unit that distills to about 140 proof. The clear spirit then goes into barrels which have an average age of 30 years.

  • Juice is naturally fermented on the lees in large wooden foudres or tonneaux for 9–10 months
  • Distilled from pears (70–80%) and apples (the appellation requires a minimum of 30% pear)
  • Single distillation occurs on a traveling, wood-fired copper column still co-owned by Lemorton and two other Calvados producers in the area
  • Aged 4–6 years in used French oak
  • Rich, oxidized aromas of pear permeate along with a touch of vanilla and mint. A slightly viscous palate exhibits gentian and cocoa with structured tannin and great length.

"Calvados made from a majority of pears can have a wild, volatile edge, that I find here in this six-year-old bottling from Lemorton. Although the wild edge is pleasantly kept in balance. This amber-colored spirit has rich fruity and floral aromas that give way to a palate of good freshness and structure, with a note of membrillo on the midpalate and a juicy finish.
