Distillery Notes:
The process of making the spirit begins with the planting of espadin agave in San Juan del Rio, Oaxaca, which are hand-selected and roasted for five days in a stone oven. Distiller Laajsh Doob distills the liquid two times in copper pot stills after natural fermentation with wild yeast. The result is a clean, yet remarkably vibrant style of mezcal. With all the tangy, smoky goodness, but none of the impurities. Amaras is a fantastic new label that should take the agave spirits market by storm.
Amarás Reposado grants you entrance to the world of mezcal with its smooth and mellow notes. Handcrafted using the same fine agave Espadín, only this time, it's matured in our barrels carved from 2 different types of Oak. During this process, it shades into an elegant, light-tanned and natural amber tone, after being left for a minimum of 3 months to adjust itself into our beloved Amarás Reposado.
Process: Conical stone oven, mechanical shredder, natural fermentation in ayacahuite pine vats, double distilled in small copper still
Tasting Notes:
Nose: Elegant warm touch of wood and freshly cooked agave.
Palate: Smooth flavor with light notes of vanilla and toasted hazelnut.
Finish: Persistent and warm with a delicate duration.
