Distillery Notes

Part of Kaiyo's Wood Library Series, made from 100% malted barley. Maturation in new mizunara oak casks for five years in a Japanese warehouse, then 3 months at sea voyaging from Osaka to the UK, where they continue to mature in the Japanese mizunara oak casks.

Secondary maturation in experimental “wet char” bourbon barrels for five more years.

"Finished in wet-char bourbon barrels, the nose has pecan pie, toasted wood sugars, maple syrup, oak char, roasted spices, espresso foam, and cedarwood. The typical Kaiyo mizunara character feels lost here, but it’s more than made up for with the delicious flavors from those bourbon barrels. The palate brings milk chocolate, malt, roasted spices, dark toffee, forest honey, roasted pecan, oak char, and cinnamon."
