Distillery Notes
Part of Kaiyo's Wood Library Series, made from 100% malted barley. Maturation in new mizunara oak casks for six years in a Japanese warehouse, then 3 months at sea voyaging from Osaka to the UK, where they continue to mature in the Japanese mizunara oak casks.
Finished in rum agricole casks from Martinique producer JM Rhum for two more years.

"The rum cask finish complements the effects of the mizunara aging, producing a more sophisticated array of flavors than expected. The nose brings vanilla frosting, light caramel, incense, aromatic spices, flaked almond, citrus peel oils, and hints of tropical fruit. Sweet melon, honey, lemon juice, grapefruit peel, vanilla, rum-raisin ice cream, and a deep well of spices on the palate, followed by honeyed mizunara notes, vanilla custard, candied orange, buttery fudge, and lemon shortbread."
