About the Winery:
Bruno and Marcello Ceretto founded I Vignaioli di Santo Stefano in the birthplace of their father, Riccardo, along with Giancarlo Scavino and five other friends from the local wine industry in 1976, with one singular objective: to elevate the image of Moscato d’Asti. Today only the Ceretto & Scavino families continue the superior winemaking tradition their fathers had originally championed. Together they farm just over 57 acres of Moscato in the municipality of Santo Stefano Belbo.

About the Wine:
I Vignaioli di Santo Stefano produce their flagship Moscato d’Asti from 57 acres of estate-grown and estate-controlled vineyards grown at 754 - 984 ft. in elevation. Packaged in an award-winning bottle, this wine qualitatively and quantitatively stands in a class of its own.

Limited pruning, well-balanced use of organic fertilizers, green harvesting and the rigorous selection of grapes during harvest are the pillars of our vineyard management philosophy. The unique aromatic properties of the Moscato d'Asti grape are preserved and enhanced by limited and carefully monitored rackings, finings, and filtrations.

Grapes are hand-harvested in small boxes and free-run and first-pressed juice is settled in stainless steel tanks where it is subjected to a continuous soft flushing of nitrogen to promote the clarification process. The resulting juice is left to cold soak for a period of 2-3 hours at which time the free-run juice is racked, further chilled to 32°F and stored in stainless steel tanks until the end harvest.

Individual lots are then blended together and fermentation takes place between 60-64 °F  over 5-8 days. During the first phase of fermentation the top of the tanks are left open and during the second phase they are kept closed to trap in natural C02, providing the wine with its characteristic spritz and halting alcoholic fermentation at 5.5% ABV.

Clear and refreshing with its characteristic sweetness coupled with well-integrated acidity, this is the par excellence dessert wine.

Tasting Notes:
With refined and subtle bubbles, this wine is fragrant and alluring. Containing layers of complexity, great balance and subtle acidity, this low-alcohol wine may be enjoyed both as an aperitif or as a dessert wine and should be served very cold.
