Notes from the Distillery:
High Country™ American Single Malt is made in our copper pot stills high in the Wasatch Mountains of Utah. As admirers (and imbibers) of the famed single malt whiskies of Scotland, we wanted to create a uniquely crafted version of an American single malt.
To provide the robust, flavor-forward profile more typical of American whiskeys and of our High West style, High Country™ American Single Malt is distilled “on-the-grain.” This means that we leave the grain in during fermentation and distillation, instead of filtering it out.
In the tradition of American and Scottish whiskey making, we use both freshly charred and second-use oak barrels during the maturation stage.
These techniques produce a whiskey that shows its distinctive and delicious American qualities with a heavier mouthfeel, roasted malt character, and balanced complexity. High Country™ American Single Malt is best enjoyed neat or with a few drops of water while appreciating a magnificent western vista.

Ageing: A blend of single malt whiskeys aged 2 to 9 years in new and used charred white American oak ex-Bourbon and ex-Rye barrels; portion finished in French oak port barrels
Mash Bill: Blend of 3 100% Malted Barley recipes (#1 = Two-Row Malt + Crystal-60 + Chocolate Malt, #2 = 100% Two-Row Pale Malt, #3 = 100% Peated Scottish Malt)
Tasting Notes:
Nose: Roasted macadamia nuts, dried cherry, bananas Foster, toasted coconut, chocolate chip ice cream, raisin bread, soft wood smoke in a sooty chimney, sea spray
Taste: Smoked pear, honey over baked apples, lemon rind, cherry Toblerone, dark chocolate milkshake topped with whipped cream, toffee nuts, toasted puffed rice, sea salt & buttered skillet brioche rolls
Finish: Honeycomb, charred marshmallow, cocoa nibs, earthy spice from a forest floor

"Very malt-forward, with the grain aromas pleasant and sweet, accompanied by whiffs of pine nuts and pepper spice. The palate is malty and well-textured, though it seems young, and offers notes of candied watermelon, poached pears, and red apple slices. Lots of maltiness on the finish as well, with chocolate spice and vibrant fresh fruit notes of apple and peach. A pleasant whiskey that perhaps needs a bit more maturity."
