About the Winemaker:
As early as 2015, Fabien Demois opted for biodynamic viticulture, a production system that considers the earth as a whole at the service of living beings. So, in addition to the preparations, horse manure from the Chezelet stable, located on the estate, is used as an amendment for the vines. Fabien Demois respects the natural rhythm of the plant. Sheep graze the plots in winter. Grasses are sown between the rows with a variety of species such as barley, radish and clover to encourage biodiversity and serve as green manure. All harvesting is done by hand in crates. The wines are vinified by plot in concrete vats, with no time constraints, then matured in barrels or vats to create the best expression of Chinon wines, and on specific terroirs, plot-by-plot cuvées are offered for straightforward wines with complete control. Established in 2008, Fabien Demois is not yet in his thirties, but already has 24 hectares to cultivate, from which he makes this small cuvée from half a hectare of old vines, and which he matures in barrels for a year.
