About the Winemaker:
Domaine William Fèvre is a historical and environmental pioneer in Chablis. The domaine covers a total of 78 hectares, including 15 hectares of Grand Cru vineyards as the largest Grand Cru landowner in Chablis. The domaine is also comprised of 16 hectares of Premiers Crus, including icons such as Vaulorent, Montmains, and Les Lys, among many others. William Fèvre has been committed to a strong environmental approach for more than 20 years, receiving their HVE3 certification in 2014. Domaine William Fèvre does everything possible to express the most subtle variations in Chablis' climats and to offer wines that give everyone, from novices to connoisseurs, the opportunity to enjoy an experience characterized by a superb expression of purity and minerality.
This wine is made entirely from William Fèvre’s estate parcels, managed organically since 2000. Grown from 38 hectares mostly adjacent to Premier Cru vineyards, it ages for 10-12 in almost all stainless steel, with 5-10% aging in old French oak barrels for 5-6 months. A gateway to both Chablis and this leading estate.
Very fresh bouquet with notes of citrus and white fleshed-fruit. Fresh and supple, the wine is marked by mineral notes that are typical of the appellation.
Pair with fish dishes, grilled or in a light sauce; various seafood, oysters and sushis.

The domaine’s holdings cover 38 ha, and the various cuvées have just been blended, and will stay on lees through to December. Pale lemon yellow. An entrancing bouquet, on the sunnier side but with a mineral undercurrent. Sherbet on the palate along with citrus, good concentration, and an evenly balanced finish. Drink from 2025-2028. Tasted Jun 2024.

The Domaine’s 2023 Chablis villages is also a fine version, and despite having only been bottled a bit more than three weeks before my visit, it was showing well. The wine’s aromatic constellation is vibrant and classy, offering up scents of fresh lime, green apple, flinty minerality,white lilies and a topnote of citrus zest. On the palate the wine is deep, full-bodied, complex and shows off an excellent core of fruit for a villages level bottling, with bright acids, fine focus and grip and a long, minerally, complex and nicely precise finish. 2025-2045.

Sourced from a mosaic of exposures and elevations and incorporating old vines planted between 1969 and 1972, the 2023 Chablis Village offers aromas of pear, white flowers and freshly baked bread. Medium- to full-bodied, ample and charming, it is underpinned by ripe yet racy acidity and concludes with a long, saline finish. Harvested earlier to preserve freshness, this is a well-executed village-level Chablis.(WK)

Note: from domaine fruit. Here the expressive nose is similar if perhaps just a bit more elegant and displaying a whiff of mineral reduction. There is slightly better volume to the delicious medium-bodied flavors that possess unusually good power in the context of the appellation and the only nit is a trace of warmth. This too should drink well after only a few years of keeping.
