About the Winery: 
Domaine Sigalas was founded on the island of Santorini in the south Aegean in 1991 by Paris Sigalas, Christos Markozane and Yiannis Toundas. Located outside the small town of Oia, on the northern part of Santorini Island, their very modern winery was built in 1998, although grape growing in this part of the world dates back to antiquity.

The viticultural region of Santorini is ancient, with varieties that date back thousands of years. The vines are classified as old vines (since they were not destroyed during the Phylloxera epidemic), and are over 50 years in age. The company cultivates 19 hectares of vineyards with local varieties and produces quality wines, in which you can see the potential of the varieties and the unique 'terroir' of the volcanic island. The viticultural region of the island has a size of approximately 1,400 hectares, starting at sea level and ascending in terraces up to the caldera, which has a height of 150 to 250 meters above sea level. Vines literally grow right up to the beach and are situated in very sandy soil.

About the Wine:

Winemaking
Rigorous grape sorting by hand on conveyor belt. Whole bunch gentle yet long pressing. Vinification in stainless steel tank under controlled temperatures. At least 4-month lees aging and periodical stirring (bâtonnage) in the tank.

Tasting Note
Pale lemon color. The nose is expressive and fruit-forward with notes of stone fruit and citrus -peach, lemon, lime. A floral character follows gently in the background, mainly of lemon blossoms. Oily mouthfeel with powerful structure, while the bright acidity contributes to the balance and the long finish of the wine.

"The Domaine Sigalas 2025 Santorini Assyrtiko offers a youthful and approachable expression of the variety with aromas of chamomile, confit lemon, quince and Mediterranean herbs, including sage. Compared to the estate's more ambitious bottlings, this wine is simpler and more immediate, emphasizing texture and drinkability over mineral complexity. The palate is rich, slightly oily and pleasantly textured, with enough acidity to maintain sharpness. Produced in 45,000 bottles from vines more than 60 years old rooted in the volcanic soils of Oia, where pumice, lava and pyroclastic materials shape the vineyard landscape, the wine ages on its lees for at least four months. First released in 1991, this is one of the earliest 100% Assyrtiko wines from Santorini, and it remains an important benchmark."
