About the Winery:
Domaine Rossignol-Cornu, located in Volnay since the 19th century, was born from the union of two families: the Rossignols of Volnay and the Cornus of Pernand-Vergelesses. The vineyards in Volnay, Pommard, and Meursault come from the Rossignol family, rooted in Volnay for several generations, while those located in Pernand-Vergelesses are the legacy of the Cornu family.
Didier Rossignol has managed the estate since 1989, having succeeded his father. His son Julien joined him in 2018, thus perpetuating the family tradition. The estate now covers approximately 6 hectares, spread between Pernand-Vergelesses and Meursault.
About this Wine:
The Bourgogne Hautes Côtes de Beaune appellation, officially established in 1961, is a white wine made from 100% Chardonnay grapes. Produced from young Chardonnay vines planted in 2019 and 2020, this Bourgogne Hautes Côtes de Beaune Blanc reflects the purity and vibrant character of Burgundy’s elevated hillside vineyards. Combining bright fruit, floral aromatics, and refreshing acidity, the wine offers an elegant and approachable expression of the appellation.
After harvest, the grapes are gently pressed and the must is cold-settled in stainless steel tanks for 24 hours. Alcoholic and malolactic fermentations take place in French oak barrels, with bâtonnage performed when necessary to enhance texture and complexity. The wine is aged for 9 months in barrel, including 20% new oak, before spending an additional 3 months in stainless steel tanks prior to bottling.

Bourgogne Hautes Côtes de Beaune Blanc is characterized by its freshness, aromas of white flowers and white-fleshed fruit, and a pleasant minerality. Offering a lovely vivacity on the palate, it is perfectly suited to being enjoyed young while also possessing interesting aging potential.
