About this Producer:
The estate is located in Chorey-les-Beaune and produces wines in Chorey-les-Beaune, Savigny-les-Beaune, Aloxe-Corton, and Beaune. It began in 1992 after Michel Gay and his brother split up their century old family estate and decided to go it alone. Beginning with a meager 6.5 hectares in ’92, the domaine has grown a bit to just over 10 hectares today. In 2000, the fifth generation winemaker, Sébastien Gay returned to the domaine following his studies in Beaune and immediately set about improving things.
Sébastien ferments all of the wines in tanks of concrete or stainless steel except for the small parcel of Corton which he uses an open top wooden fermenter. The wines are then transferred by gravity to barrels deep below ground where they undergo anywhere from 14 to 18 months elevage before being bottled. Sébastien uses a combination of coopers for his barrels and new wood is kept to below 40% of the cuvee for all wines except the Corton. Once bottled, Sébastien prefers to keep the wines for as much as one year before releasing them ensuring that they are that much more ready to drink once they hit the market.

Vineyards: At the altitude of 240m (in the middle of the slope).
Located just between the 1er Crus of Grèves and Cents Vignes, Toussaints benefits from a perfect situation in the middle of the hillside in Beaune facing south east. The soil is deeper here than in Grèves giving the wine a more round and supple texture than the more structured Grèves.
Vine age: Between 50‐60 yrs old.
Soil: Clayey ferruginous limestone on top of a slab of limestone.
Vinification: 25% in new barrel.

A lush, mouthfilling red, whose cherry, plum, sandalwood and cardamom flavors are complemented by well-integrated tannins. This is powerful and graceful at once, with a lingering finish of spice. Best from 2023 through 2040. 200 cases made, 20 cases imported.
