About the Winery:
Domaine Pierre RAVAUT is a family estate of 7.5 hectares, located in Ladoix-Serrigny in the Côte-d’Or, between Beaune and Nuits-Saint-Georges, at the foot of the hill of Corton.
Pierre and Anne-Sophie, both natives of Burgundy born into winemaking, work on and manage the Domaine, controlling every step involved in looking after the vines and making the wine, respecting tradition and demanding quality.
The Domaine is worked using environmentally friendly methods known as “la lutte raisonnée” and the soil undergoes regular seasonal tasks (spiking, tilling…).
It is harvested manually by a team of experienced grape pickers.
The vinification is very traditional (grapes are selectively sorted, de-stemmed if the grape variety requires it, open vats are used with daily pigéages and a 10 – 15 day fermentation period). However, significant improvements have been made thanks to thermoregulation and the analytical monitoring.
The wines are aged and refined in French oak barrels for approximately 12 months for white wines and 18 to 24 months for red wines, according to the appellation and the vintage.
After bottling the wines are stored in our cellars where the temperature and humidity conditions are ideal.

About the Wine:

Grape variety:
PINOT NOIR 100 %

Vinification:
Manual harvest with selective sorting. Total de-stemming then alcoholic fermentation between 25° and 34° C in stainless steel vats for 10 to 15 days. Daily pigéage until devatting.

Ageing:
The wine is aged for 12 months in French oak barrels (made by local coopers), of which 15% are new barrels. Racking and assemblage in stainless steel tanks for 6 months on fine lees before bottling.

Terroir:
Located at the bottom of the hill, the subsoil is composed of limestone debris with flint and clay. This parcel is entirely protected by high dry stone walls
