About the Wine:
The Turquoise Menu has been developed at the Domaine since 1957. The "classic" of the house. Fine bubbles, freshness, length in the mouth. Very high digestibility.
Crémant de Loire, recognized AOC in 1975, is the worthy heir of the Loire Valley to Champagne to which it owes its existence. Faced with the growing demand for fine sparkling wines, the great houses of Reims and Epernay set up subsidiaries in the Loire Valley at the beginning of the 19th century. They had noted similar conditions for making sparkling wines.
Blend: Chenin blanc, Cabernet Franc, Chardonnay.
Manual harvesting by successive sorting.
Average age of the vines: 35 years
Soil: Sandstone shale
Winemaking:
Pressing: Fractional pneumatic, direct in whole bunches
Fermentation: At low temperature, long and controlled.
Maturation: 18 months of ageing on slats minimum.
Tasting Notes:
Eye: Pale yellow with silver reflections Nose: Mineral, autumn fruits, quince, pear and apple Palate: The wine is tense, it enjoys a great freshness brought by citrus fruits (lemon and grapefruit), followed by sweeter, finely sappy, honeyed notes. The final is mineral, chalky
