About the Winery:
The Bader-Mimeur estate was born from the alliance of the Burgundy families Nié-Bader and Mimeur. The family has owned and managed vines in and around Chassagne-Montrachet since the 1700’s. In 1919, the founder Charles Mimeur, then a wine-grower in the Maranges region of Burgundy, acquired the 5 prestigious hectares of vines from the Château de Chassagne-Montrachet. His daughter Elise married Charles Bader, who took over the reins. The estate passed on from generation to generation, operated by Marie-Pierre Bader and husband Alain Fossier until 2020 when their children Nathalie and Sébastien took over (Fossier away in 2021).

The vineyard now extends over 8 hectares, mainly in Chassagne-Montrachet and Saint-Aubin, and the Bader-Mimeur family owns and manages 98% of the vines of the Château de Chassagne-Montrachet as well as other vines located in the Chassagne-Montrachet and Saint-Aubin villages.

About this Wine:
From vines with an average age of 40-70 years planted on clay-limestone soils, this wine is aged 16-18 months in French oak barrels, of which 20% are new. Admirable ripeness with typical Pinot notes of cherry and red berries. Background structure still allows the fruit to take the starring role.

Grape variety: 100% Pinot Noir

Vineyard management: Old vines from 55 to 80 years old. Sustainable pest management, zero herbicides. Partial grassing with mechanical soil work. High Environmental Value Level 3 Certification.

Winemaking: Hand-picked only, in 15 kg perforated crates. The grape clusters are cooled and 100% destemmed before being vatting in wooden vats for 2 to 3 weeks. Cold pre-fermentation maceration before starting alcoholic fermentation using indigenous yeasts. Gentle extraction by alternating punching down and pumping over.

Aging: In French oak barrels for 12 months with 25% new barrels, then blended for 6 months in vats before bottling.

Storage potential: About 15 years old

Food and wine pairings: Serve between 16 and 18°C ​​with the following dishes: Baked rib of beef, Baked rack of lamb, Baked leg of lamb, Grilled entrecote, Baked roast beef, Roast pork in the back with its boulangère potatoes, Veal kidneys Burgundy style, Baked rabbit with Dijon mustard, Duck breast with apples, Grilled andouillette, Coq au vin and bacon, Baked Bresse chicken and stuffing, Pot au feu, Beef tongue, Guinea fowl with Brussels sprouts, soft cheeses.

Tasting Notes:
Beautiful, deep color with purple highlights. Intense, concentrated nose of black currant buds and juicy black fruits. The palate is fresh and concentrated, on the fruit, supported by very fine tannins and delicate wood. To wait a while longer. (tasted in 2022)
