Notes from the Winemaker:
Métier Cabernet Sauvignon is an inviting, smooth wine with black cherry and plum aromas pouring from the glass. Flavors of bold dark fruits and charming notes of baking spice combine with a juicy midpalate and pleasantly firm, dry finish. Best paired in the company of family and friends, Métier offers a balance of structure and approachability that can accompany a wide variety of foods.
The sun-soaked Columbia Valley of Washington State provides ideal growing conditions for Cabernet Sauvignon, with dramatic swings in temperature from day to night. This natural phenomenon, known as diurnal shift, offers cool nights that conserve acidity, and intense sunny days that infuse bold, ripe fruit flavors. It is from this foundation of distinctive fruit that we meticulously craft our Métier, acknowledging the very best of the hands that diligently work the vineyards and the cellar.
100% Cabernet Sauvignon, 8-10 days maceration
Age in 40% new French oak
Sourced by DeLille’s winemaking team from established and up-and-coming vineyard sites throughout the Columbia Valley, including Candy Mountain AVA.
Ratings & Reviews
91 Points & #66 Top 100 of 2023 - Wine Spectator Magazine:
"Offers good energy and refined flavors of blackberry, dusky spices and black olive that build structure toward medium-grained tannins. Drink now through 2031. 16,000 cases made." - TF (Nov 2023)
91 Points - Jeb Dunnuck:
“A terrific value that would probably run you three times the price if it was from Napa, the 2021 Métier Cabernet Sauvignon has textbook leafy herbs, tobacco, and darker currant fruits in a medium-bodied, elegant, balanced package. It has classic Cabernet herbal, floral, spicy notes and is well worth drinking any time over the coming decade or so.” (Jun 2023)
"This attractive new cabernet from DeLille has a lovely, mildly backward scent of pine, pepper, and tobacco. The flavors reflect a dark cherry cast, but delivered firmly, with grippy cherry-skin tannins."
90 Points - Vinous Media:
"The 2021 Cabernet Sauvignon Metier is unexpectedly fresh with zesty red berries, peppery florals and wild herbs. It boasts tart red fruits and inner herbal tones with mineral underpinnings, all kept nicely in check by zesty acidity. This finishes with a staining wild raspberry concentration and grippy tannins that frame the style well. The Metier Cabernet Sauvignon is produced mostly from Candy Mountain fruit." Drinking window 2025-2028 - Eric Guido (Mar 2023)
90 Points - Wine Enthusiast:
"The Métier's aroma of orange-scented pipe tobacco makes a nice foil for notes of black cherry and boysenberry. The Syrah-driven blend offers blueberry, leather and black tea flavors that fill the mouth. A touch of powdered sugar floats in the background. Muscular tannins, with a chewy texture." - MA (Nov 2023)
