About the Wine:

A cuvée from 2 hectares of south-facing terraced vines, located on the hillside of Semons. “Bassenon” is the name of the stream located at the bottom of the hillside.

Terroirs : Granite migmatite and gneiss

Grape varieties : 90% Syrah, 10% Viognier.

Viticulture : planted in high density (8,000-10,000 vines per ha). Treatments limited to the maximum depending on the weather, no insecticide to preserve biodiversity, little fertilizer and only organic. Control of vigor and yields, leaf stripping, green harvesting for better ripening of the grapes. Disbudding in the spring.

Vinification : manual harvest, plot-by-plot and traditional vinification. Use of oenological products (indigenous yeasts) as little as possible. In the cellar, sorting, crushing and partial destemming. Maceration for 3 weeks in open vats.

Ageing : 18 months in barrels. Blending of the different plots before bottling.

Olfactory tasting : attractive and fruity wine. Nose of red and black fruits, sweet flowers and some spices.

Gustatory tasting: the finesse of the terroir brings a mineral freshness to this wine. The palate remains velvety with delicate tannins.

Laying down : to be enjoyed young on the fruity aromas (4 to 5 years) or on the aromas of evolution (10 years and more).

Pairing : meat with a delicate texture but with character (candied lamb shank, spiced pigeon).
