About the Winery:
This small, family-owned Champagne house was only founded in 1981. Despite its youth, it has gained an excellent reputation, a testament to the passion, knowledge, skill and drive of Bruno Paillard. Paillard's vineyards cover 32 hectares (79.5 acres) of land over the best Crus of Champagne: Le Mesnil sur Oger, Oger, Cumières and Verzenay, for example. Altogether it represents over 100 plots, each with a different terroir. From these few acres of land, 12 hectares of Paillard's vineyards are classified as "Grand Cru" which is remarkable knowing that grands crus represent only 17 of the 320 villages of Champagne. Using sustainable viticulture, he also grows 50-60% of the grapes used in his wines himself.
Made from a blend of 50% Pinot Meunier, 25% Chardonnay and 25% Pinot Noir. The blend is dominated by the terroirs of the northern part of the Montagne de Reims and the first kilometers of the right bank of the Marne Valley for the Pinot Meunier (50%), followed by Chardonnay and Pinot Noir in equal parts. Exceptionally for Champagne, the reserve wines count for half in the assembly. Aged for 3 to 4 years on lees followed by 6 months minimum after disgorgement with zero dosage.
Tasting Notes
APPEARANCEIntense, bright, straw gold. Very fine and persistent effervescence.
NOSE
Primary notes of white fruits and fresh almond, generous but not opulent. This is followed by aromas of chocolate and toast with fresh raspberry, star anise and candied chestnuts.
PALATE
The attack is both lively and rich, blossoming generously on the palate. The same aromatic richness promised on the nose is found on the palate. Texture is both animated and chiselled, with saline notes, and a very long, persistent finish.
