About the Winery:
This small, family-owned Champagne house was only founded in 1981. Despite its youth, it has gained an excellent reputation, a testament to the passion, knowledge, skill and drive of Bruno Paillard. Paillard's vineyards cover 32 hectares (79.5 acres) of land over the best Crus of Champagne: Le Mesnil sur Oger, Oger, Cumières and Verzenay, for example. Altogether it represents over 100 plots, each with a different terroir. From these few acres of land, 12 hectares of Paillard's vineyards are classified as "Grand Cru" which is remarkable knowing that grands crus represent only 17 of the 320 villages of Champagne. Using sustainable viticulture, he also grows 50-60% of the grapes used in his wines himself.

About this Wine:
Made from a blend of 50% Pinot Meunier, 25% Chardonnay and 25% Pinot Noir. The blend is dominated by the terroirs of the northern part of the Montagne de Reims and the first kilometers of the right bank of the Marne Valley for the Pinot Meunier (50%), followed by Chardonnay and Pinot Noir in equal parts. Exceptionally for Champagne, the reserve wines count for half in the assembly. Aged for 3 to 4 years on lees followed by 6 months minimum after disgorgement with zero dosage.

Tasting Notes

APPEARANCE
Intense, bright, straw gold. Very fine and persistent effervescence.

NOSE
Primary notes of white fruits and fresh almond, generous but not opulent. This is followed by aromas of chocolate and toast with fresh raspberry, star anise and candied chestnuts.

PALATE
The attack is both lively and rich, blossoming generously on the palate. The same aromatic richness promised on the nose is found on the palate. Texture is both animated and chiselled, with saline notes, and a very long, persistent finish.

Ratings and Reviews

93 Points - James Suckling:
"Intense yeasty autolysis with crackers, sourdough and stones that lends itself well to the sliced apple characters. Bone-dry and austere on the palate with subtle, creamy perlage and concentrated flavors, and a rather mineral finish. 36 months aging on the lees. Disgorged in October 2021." (Apr 2023)

93 Points - Vinous Media:
"The NV Dosage Zero is a very pretty and expressive wine. The no dosage style is not especially evident, as the wine's balance is simply impeccable. Dried pear, crushed flowers and spice all flesh out. The mousse is quite refined, and that only adds appeal. Bruno Paillard's Dosage Zero is very much done in his style." - Antonio Galloni (Nov 2020)

92 Points - Wine Enthusiast:
“While this producer's Champagnes all tend toward dryness, this is the ultimate. The wine's total dryness is balanced by the essential aging that it has undergone both before and after disgorgement. Even so, its fruits could still take time softening into the structure. Drink from 2022.” – Roger Voss (10/1/2021)

91 Points - Wine Spectator:
“A well-balanced version, clean-cut and chalky, with a subtle mesh of Asian pear, preserved lemon, dried white cherry and salted almond. The minerally underpinning drives the spiced finish. Chardonnay, Pinot Noir and Pinot Meunier. Disgorged April 2020. Drink now. 1,300 cases made, 250 cases imported.” – AN (Nov 2022)

91 Points - Wine Advocate:
"There was no dosage for this cuvée disgorged in October 2021. The Bruno Paillard NV Dosage Zéro, elaborated with a majority of vins de réserve, expresses a vibrant and pure bouquet with aromas of almond, pear, peach, spring flowers, menthol and some toasty hints. Tense with racy acids, the palate is medium to full-bodied with a chalky, saline finish. It's a very fresh and pure Champagne." - Yohan Castaing (Apr 2023)
