About the Domaine:
In 1818, Nicolas François Billecart and his wife Elisabeth Salmon founded the house of Billecart-Salmon in Mareuil-sur-Aÿ, which now stands as the oldest continuously family-owned and operated house in Champagne. The estate is currently managed by the family’s seventh generation, brothers François and Antoine Roland-Billecart, while the cellars lie in the hands of Florent Nys.
After 33 years, François Domi has handed over the baton of Chief Winemaker to Florent, who has been working as an apprentice under the watchful eye of François since 2005, is now ready to take over the reins.

The Brut Reserve is a light, fine and harmonious champagne. Its blend is made with Pinot Noir, Chardonnay and Pinot Meunier from three different years, sourced from the best sites in the Champagne region.
Appearance: This cuvee, with reflections of straw yellow, stands out by the finesse of its slowly rising bubbles and its persistent and abounding mousse.
Aroma: Maturity touched with floral freshness for this cuvee that breathes aromas of fresh fruit and ripe pears.
Palate: A full and accurate flavor combined with a fine freshness and a rich bouquet bear witness to the ageing of this cuvee in the House's traditional cellars.
Serving: The Billecart-Salmon Brut Reserve is the ideal partner for every occasion. It is perfect as an aperitif and can be enjoyed with a wide variety of dishes. It should be served at 8°.

"Based on the 2018 vintage, with 55% of reserve wines, the NV Brut Réserve from Billecart-Salmon is a blend of 40% Pinot Meunier, 30% Chardonnay and 30% Pinot Noir, with a dosage of 6.2 grams per liter. It offers a bouquet with aromas of spring flowers, menthol, pastry, brioche, orchard fruits and pear. Medium to full-bodied, the palate is moderately weighted, with a delicate mousse and a perfectly balanced texture. Very charming. It concludes with a saline, aromatic finish.
