About the Domaine:
In 1818, Nicolas François Billecart and his wife Elisabeth Salmon founded the house of Billecart-Salmon in Mareuil-sur-Aÿ, which now stands as the oldest continuously family-owned and operated house in Champagne. The estate is currently managed by the family’s seventh generation, brothers François and Antoine Roland-Billecart, while the cellars lie in the hands of Florent Nys.

After 33 years, François Domi has handed over the baton of Chief Winemaker to Florent, who has been working as an apprentice under the watchful eye of François since 2005, is now ready to take over the reins.

About this Wine:
Composed of the three Champenois grape varieties:

• 30% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne

• 30% Chardonnay sourced from the best Crus in the Champagne region

• 40% Pinot Meunier from the Vallée de la Marne and the southern slopes of Epernay

A Champagne with complex and seductive aromas of dried fruits and brioche combined with floral notes. These are further enhanced by the subtle charm of lemon verbena. It exhibits a charming biscuity flavor with notes of white flesh fruits and a full and harmonious minerality which results in a sensational balanced finish. A new definition of a refined style, it will surprise you in its complicity with the finest food and wine pairings: a veal carpaccio, grilled scallops and citrus marinated sashimi

• No sugar added to the dosage

• Vinification in stainless steel tanks

"A dense, layered Champagne with a full body and lots of creamy texture. Lovely cooked apple and pie crust. 40% pinot meunier, 30% chardonnay and 30% pinot noir. The base was 2015, but in total it contains 10 harvests. It was bottled at the beginning of 2016 and disgorged in March 2020. Four years on lees. Fantastic release. Drink or hold." (12/15/2020)
