About the Domaine:
In 1818, Nicolas François Billecart and his wife Elisabeth Salmon founded the house of Billecart-Salmon in Mareuil-sur-Aÿ, which now stands as the oldest continuously family-owned and operated house in Champagne. The estate is currently managed by the family’s seventh generation, brothers François and Antoine Roland-Billecart, while the cellars lie in the hands of Florent Nys.
After 33 years, François Domi has handed over the baton of Chief Winemaker to Florent, who has been working as an apprentice under the watchful eye of François since 2005, is now ready to take over the reins.
About this Wine:
This wines comes from 25 parcels in the chalky soils of the five Grand Cru vineyards of the Côte des Blancs: Avize, Chouilly, Cramant, Oger and Mesnil-sur-Oger.
Partial malolactic fermentation is completed depending on each wine's acidity levels followed by up to 5 years of aging. The cuvée is a blend of four vintages.

"This release of the NV Champagne Blanc De Blancs is with the 2018 vintage base as well as 37% reserve wine. A bright medium yellow golden hue, it opens to a lifted and dewy profile with notes of linen, pear, and a hint of tropical fruit of passionfruit and quince coming through. Floral, fresh, and medium-bodied, it floats on the palate with a weightless, airy feel and a very pretty nature throughout. It has a fine mousse and a clean, chalky textured finish that tapers away. It will be very appealing now or over the next 12-15 years. It has the addition of 3.9 grams per liter dosage and was disgorged in May 2024." - Audrey Frick (Dec 2024)

On the palate, it is medium- to full-bodied and fleshy yet vibrant, with a muscular core of fruit and racy acidity framed by chalky extract. It is brighter than one might anticipate for the vintage, though undeniably of lesser concentration than the 2019 rendition.
