About the Whiskey
Pedro Ximénez, often abbreviated as P.X., is a dessert wine from Spain, renowned for its rich, intense sweetness. P.X. wines typically feature notes of dried fruits, velvety chocolate, and toffee. In crafting a harmonious counterpart, the BCS team meticulously blended select straight bourbon whiskeys to enhance and complement the sumptuous flavor derived from the P.X. barrels. The result is a rich, full-bodied bourbon with layers of toasted coffee, golden honey, and candied fruit, offering a sophisticated balance of depth and sweetness.

Blend components:

Kentucky: 9 & 10 years old

Indiana: 6, 7, 8, & 12 years old

Tennessee: 7 & 15 years old

Mashbill:

Corn: 80%

Rye: 16%

Malted Barley: 4%

Tasting Notes:

A captivating nose of baked apple, sweet butter, and toasted pie crust. Upon first sips, the electrifying spark of black pepper and cedar dance along flavors of creamy vanilla and baked stone fruit leaving an everlasting complex finish.

Nose: Initial impressions of a newly opened cigar box, baked golden delicious apple and pecan streusel. Diving deeper aromas of freshly cut tobacco and golden raisin combine for an herbaceous and fruity harmony.

Palate: Electric on the tip of the tongue, full body with coating numbness within the cheeks. Smoked Madagascar vanilla, warm pound cake and buttercream, spicy baked pears with star anise, freshly cracked black pepper.

Finish: Striking sensation on the tip of the tongue and lingering on the back palate. Lasting richness of buttercream frosting, black pepper, and baked stone fruit jam.

With a splash of spring water

Warm butter melted with clover honey over a buttermilk biscuit, freshly cut cedar, lasting finish of black pepper and baking spice.

"Blended from eight whiskies aged 6-15 years sourced from Kentucky, Indiana, and Tennessee, this shows raisins, prunes, and other dried fruits on the nose, with cinnamon sugar, mulling spices, and candied apple in support. The flavors evolve from sweet to dry, leading with vanilla, berries, and orange candies, then more dried fruit and toasted oak on the back palate. The finish is long and peppery, with frosted cinnamon-roll sweetness."

"A nuanced whiskey with a well-integrated finish that doesn’t overpower the base blend. Raisin leads the aroma, with tobacco, nutmeg, and dark fruits adding depth. On the palate, a subtle buttercream frosting note lays a sweet base, with hints of dark fruits, raisin, caramel, and fig along with a slight hint of dark chocolate.
