About the winery:
Castello Banfi is a family-owned vineyard estate and winery in the Brunello region of Tuscany. It was founded in 1978 thanks to the will of the Italian-American brothers, John and Harry Mariani. From the beginning, the goal of the two brothers was to create a state-of-the-art winery combined with the most advanced science in the vineyards for the production of premium wines. Together with the Mariani family, Ezio Rivella, one of Italy's foremost enologists, who understood that due to the richness of the soils and the privileged microclimatic position, the property would have great capacity of development.
Notes from the Winemaker:
"Cum Laude" is a Super-Tuscan blend of 30% Cabernet Sauvignon, 30% Merlot, 25% Sangiovese, and 15% Syrah;the wine offers blackberry notes, plum jam, cherries and licorice, with touches of black olive and tobacco. Powerful body, wide and soft tannin texture thanks to the good ripening in the vineyard and winery. Perfect with bean soups, grilled meat and medium aged cheese.
The four varieties are vinified separately with a cold maceration (14°C) prior to fermentation for 2 days. Maceration at 22°C follows until the 2 last days of alcoholic fermentation when the temperature is brought up to 27°C. After the alcoholic fermentation, the wines are separately racked into barriques where malolactic fermentation takes place and where they age approximately for 6 months. The cuvée is made and then aged an additional 6 months, completed by 6 months of bottle aging.
Color: Ruby red, intense and very deep.
Bouquet: Full bouquet, with aromas of blackberries and plums, complemented by licorice, black olives, and pipe-tobacco notes.
Taste: Full-bodied, with supple tannins.
Alcohol Content: 14.4%.
Total Acidity: 4.7 g/l.
