About the Domaine:
In 1818, Nicolas François Billecart and his wife Elisabeth Salmon founded the house of Billecart-Salmon in Mareuil-sur-Aÿ, which now stands as the oldest continuously family-owned and operated house in Champagne. The estate is currently managed by the family’s seventh generation, brothers François and Antoine Roland-Billecart, while the cellars lie in the hands of Florent Nys.

After 33 years, François Domi has handed over the baton of Chief Winemaker to Florent, who has been working as an apprentice under the watchful eye of François since 2005, is now ready to take over the reins.

Notes from the Winemaker:
The Brut Reserve is a light, fine and harmonious champagne. Its blend is made with Pinot Noir, Chardonnay and Pinot Meunier from three different years, sourced from the best sites in the Champagne region.
  • Appearance: This cuvee, with reflections of straw yellow, stands out by the finesse of its slowly rising bubbles and its persistent and abounding mousse.
  • Aroma: Maturity touched with floral freshness for this cuvee that breathes aromas of fresh fruit and ripe pears.
  • Palate: A full and accurate flavor combined with a fine freshness and a rich bouquet bear witness to the ageing of this cuvee in the House's traditional cellars.
  • Serving: The Billecart-Salmon Brut Reserve is the ideal partner for every occasion. It is perfect as an aperitif and can be enjoyed with a wide variety of dishes. It should be served at 8°.

It’s medium- to full-bodied with freshness, a creamy texture and a long, delicious finish. 40% pinot meunier, 30% chardonnay and 30% pinot noir. 28% 2019 and the rest reserve wine going back to 2006. "At the start of last year, Billecart-Salmon began listing ID numbers on their bottles and including info on the wines. The NV Champagne Brut Reserve is the current release of this cuvée and is based around the 2019 vintage. A straw hue, it is well-detailed and on the savory side, with expressive notes of orange pith, crushed stones, fresh nectarine, and a hint of jasmine green tea. It’s medium-bodied, with a lovely rounded feel through the mid-palate and a silky, stony texture, and Its mousse is elegant and pillowy. As mentioned last year, readers should not sleep on this cuvée, which is coming together very nicely. Drink now or over the coming 6-8 years." - Audrey Frick (Dec 2024)

Based on the 2020 vintage, this blend of 43% Pinot Meunier, 29% Chardonnay and 28% Pinot Noir, with 71% vins de réserve and 10% perpetual reserve, the NV Brut Réserve offers up aromas of spring flowers, herbs, blossoms, lime and brioche. Medium to full-bodied, tense and precise, with a crystalline texture enhanced by bright acids, this is a long, delicate and ethereal Champagne. Medium in body and quite gracious, the tasty NV Brut Réserve offers up hints of dried pear, spice, dried flowers, kirsch and chamomile. This is a big step up from what was the norm here a few years ago. This release is based on 2019, with 38% reserve wines going back to 2006. A touch of wood-fermentation (8%) works well here.
