Varietal notes:
Palomino Fino
The grapes for this Manzanilla come from Pago Miraflores in Sanlucar de Barrameda very close to the Atlantic.
Albariza or a white chalky soil. When wet it sheds water to deeper soils and as it dries it "clods" creating a protective layer that slows the evaporation of water from below.
The vines are bush pruned in the traditional method.
The wine is fermented in stainless steel tanks in Sanlucar.
The wine undergoes biological aging under veil of flor for over 5 years in Sanlucar de Barrameda. There are 6 criaderas + the Solera. The solera is the most famous Manzanilla solera called Misericordia with a very long and rich history.
Very dry, crisp and fresh with a slightly salty finish.

It is a finer version of La Guita, easy to drink, with a sweet note of apples in the nose, a polished and gentle palate, ending with a saline touch. Drink 2013-2014.
Deliciosa grows at the Pago Miraflores in Sanlucar de Barrameda and it's typically aged for five years under flor. This latest saca shows a lovely mix of almond flavors, salt and white fruit, all melding into the wine's deep mineral notes. It's substantial enough to serve in the company of blackened redfish."
