Maison Patricia Raquin is a negociant based in Savigny-les-Beaunes in the heart of Burgundy. Patricia and her husband, Alain, have been in the business for decades and they have developed some incredible relations with producers all over Burgundy, which allows them excellent access to grapes. The animals shown on the label are a breed of dog called Borzoi, also called "Russian Wolfhound"; the word means "fast" in Russian. Patricia and Alain are proud owners of two Borzois and they designed this label so that the dogs will be guardian of the vaulted ageing cellar inside their house.
The wine is produced from 100% Pinot Noir grapes grown on gravel and silt soils, aged in French oak barrels for 18 months. Harvested by hand and using traditional vinification in thermo-regulated stainless steel. Pre-fermentation takes place with temperature controlled cold maceration over 10 days. Long fermentation during which punchdown and pump-over are performed.
This juicy and deep, dark red offers ample red cherry and crushed strawberry fruit in a velvety profile. The palate is fresh on the entry with crisp, slightly tart red fruit with just a touch of creaminess toward the finish. There is a wonderful gentle note of wet earth and tobacco/black tea spice sprinkled throughout. The wine pairs well with any hearty red meats and cheeses.
