A slow cool fermentation with the temperature kept under 18°C takes place in stainless steel with each variety and each village kept seperate. The wine undergoes a full malolactic-fermentation prior to final blending. Secondary fermentation takes place in bottle at 9°C in the deepest Pol Roger cellars (33 metres below street level) where the wine is kept until it undergoes \u003c\/span\u003e\u003ci\u003eremuage\u003cspan\u003e \u003c\/span\u003e\u003c\/i\u003e\u003cspan\u003e(riddling) by hand, a rarity in Champagne nowadays. In the glass, it opens to springy and dewy floral aromas of honeydew melon, fresh flowers, citrus blossoms, and pastry dough. Medium-bodied and inviting, it’s approachable now and takes on a more mineral character on the palate without ever feeling austere. All its components move seamlessly through the palate, with a refined mousse and a kiss of sunny feel on the finish nodding to the warmth of the vintage, but it’s clean and refined all the way through.
