The Ignios Origenes winery is a living, working homage to the igneous rocks that define the otherworldly landscape of Tenerife. Owner and winemaker Borja Perez is a young man enamored with the singular terroir of the Canary Isalands, and has spent almost his entire life studying agriculture and learning to make wine from his father. Ignios Origenes was born in 2011, when Borja was presented the opportunity to buy Baboso Negro and Marmajuelo Blanco vines. With a deep-seated respect for the indigenous varieties of the Canaries, Borja seized the opportunity. In 2012 he added Listan Negro vines to the project. The vineyards are farmed organically, the winery is gravity-fed and SO2 level are kept to the absolute minimum. The Ignios wines are characterized by intense aromatics and uniquely-Canary mineral and saline qualities. Production here is tiny - less than 500 cs total. Borja Perez is the Canary Island's rising star.

100% Baboso Negro. After careful selection in the vineyard and winery, the grapes are 30% de-stemmed, lightly pressed and macerated in small bins for 48 hours. Afterward, the wines undergo a three week fermentation in stainless steel using native yeasts. Manuel punch downs are preformed daily. Upon completion of fermentation, the wine is lightly pressed and placed in 228 Liter French Oak barrels to undergo malolactic fermentation and age for 18 months. Lastly, it is clarified and bottled without filtration or cold stabilization.
