During this period, a very soft extraction is carried out, making only a couple of pumping over daily. Then it is racked and malolactic fermentation takes place in steel tanks. Subsequently, around December, the wine is placed in small oak barrels, 30% new and 70% second and third passage, where it remains to age for a total of 24 months.
