About Margerum:
Margerum Wine Company has been making wine naturally prior to it becoming the fashion. We use the natural by-products of fermentation, co2, and lees as antioxidants instead of sulfur. We preserve the wine by fermenting very cold, keeping the lees suspended in the high retained co2 environment. The alcohol contents are lower then most American producers and by picking less ripe we get higher acidity and low pH which contribute to their stability. We are low-intervention. We add yeast and for the rose we do fine but with pea shoot powder – so all of our wines are vegan.

The scale of production is kept at a level where we can touch and know the wine as it is raised to the bottle or can – the antithesis of mass production. We use old world winemaking techniques in the new world. The standards of quality are measured by our criteria – not by external sources. The winery is kept at a constant 55 degrees to preserve flavor. All of the red wines are fermented in small open-topped fermenters and punched down by hand. We farm organically and sustainable – we are good stewards of the land. While I’m a proponent of natural I do believe in making clean wines and we do filter some of the wines – just like you filter your coffee.

About the Wine:
M5 White is a white Rhône varietals blend similar to Châteauneuf-du-Pape Blanc. M is for Margerum, 5 is for five grapes that make up the blend. It is rich with complex flavors and a long finish. Colors of straw and golden hues with a viscosity that clings to the glass as it is swirled. M5 White has a full, round and pleasing palate with ample acidity to balance the richness. This is a wine that will continue to evolve with time in bottle.

Tasting Notes

A unique blend of Grenache Blanc, Marsanne, Roussanne, Viognier and Picpoul Blanc Aromas of apricots, white florals, sweet honey with hints of brioche toast and tropical fruits. Flavors of apple and a touch of peach nectar engage with the bright acidity. Aged in mostly neutral French oak barrels and puncheons.

Food Pairing:
The taste and aromatics of Rhône white blends are ideal for our Santa Barbara lifestyle. They pair well with the alfresco meals we eat and the cuisine typical of this area: grilled seafood, papaya salsa, meadow picnics, the beach, seafood skewers and general fun. These wines are great while young and develop to an entirely different experience with bottle age. Try M5 White with grilled foods, especially fish and sausage, tapenades, ratatouille and fish stew. For cheese, we suggest light blues & triple creams.

Technical Data

Vintage Conditions:
2019 was an outstanding vintage. It was a very cold winter and a very mild spring and summer leading to slow maturation and long hang times for increased complexities. Harvest was much later in the summer which allows us to harvest under kinder cooler conditions – there were essentially no heat spikes which tend to cause drama and we have a no drama policy.

Each component was fermented separately in neutral French oak barriques, puncheons and a bit of stainless steel. Aged on fine lees for 8 months. A small portion of the wine was allowed to go through malolactic fermentation to increase mouthfeel.
