The vines, approximately 60 years old, are primarily planted to Grenache, harvested at optimal maturity. Vinification takes place in large open-top concrete tanks, with 95% of the grapes fully destemmed and 5% left whole. This approach allows for gentle, infrequent cap management that builds fine-grained tannins in a Burgundian style while maintaining the natural freshness of the fruit. Each grape variety is vinified separately at peak ripeness, then blended after malolactic fermentation. Aging occurs predominantly in concrete, with 10% of the final blend aged in barrel to enhance complexity. Fermentations are carried out with ambient yeasts.
