Notes about the Winemaker:

Tasting notes:
Color : Brilliant ans sustained ruby colour.
Nose : Deep aromas of red and black fruits, lightly spicy.
Mouth : Robust, fleshy and fruity.

Food Pairing: Grilled or roasted red meats, legs of lamb, game birds.

Grape: Pinot Noir 100%

Soils: Gravelly, chalky clay-like soil from the bajocian era, on top of fossilised scree made of white oolite.

Vinification & Maturing:
Harvested by hand, sorted and destemed.
Alcoholic fermentation in open vats, for about 15 days with 2 handmade punch-down a day at the beginning.
Maturation in oak barrels (10% new barrels) for 13 months.

"A sweetish nose of very high-toned strawberry and raspberry aromas leads to equally sweet and mildly cloying light weight flavors that finish with enough warmth to notice. This overtly fruity offering lacks concentration and is almost devoid of interest. I'm not sure what happened but in a vintage like 2010, it's not clear why there wouldn't be more supporting material." - (Oct 15, 2013)
