About this winery: 
The noble Costanti family goes back a long way - at least to Renaissance times. Costanti Brunellos, however, were jealously guarded secrets until the early 1960s, circulating solely among the owners' friends and family. Costanti's winemaking respects the terroir and the natural character of wines from a cooler area, aiming at long, slow evolution in the bottle rather than immediate impact. 

Tasting Notes:
Brilliant ruby in color, the intense, ripe aromas of berry fruit prelude a lush and full-bodied palate, gorgeous tannis and nice structure, good longevity.

Food Pairing:
Decant at least an hour beforehand and pair with rich, structured dishes, red meat, game, seasoned cheeses.

Vinification:
Fermentation takes place on the skins in temperature-controlled, stainless steel tanks, lasting approximately two weeks.

Aging:
The wine sojourns 36 months in wood: 18 months in Slavonian oak barrels (from 30 hl) and 18 months in French tonneaux (3.5 to 6 hl). Once bottled, the wine rests at least 12 months before it is released.
