Notes from the Winemaker:
The Tollot family represents a long lineage of winegrowers dating back to the late 1880s when Francois Tollot began planting vineyards in Chorey-les-Beaune. Today, cousins Nathalie, Jean-Paul, and Olivier Tollot are in charge. The wines of Tollot-Beaut are well-known for their serious but pleasing style across a range of appellations from Bourgogne to Grand Cru.

Chorey-lès-Beaune lies on the plains below the Cote d'Or escarpment with 336 acres almost exclusively planted with Pinot Noir. Initially, the Tollot family owned vines only in Chorey, but successive generations made small acquisitions in Savigny-les-Beaune, Aloxe-Corton, and Beaune for a current total of 60 acres.

"Les Lavieres" is named after a flat piece of stone called This is one of Savigny's best premier crus despite its northeastern exposure. Savigny sits in a small east-west valley perpendicular to the cote. Vineyards on the Beaune side tend to give more richness and concentration whereas vineyards on the Pernand side (where Les Lavières is located) tend towards delicacy and perfume.

Tasting Notes:
Savigny-lès-Beaune Les Lavières is soft, supple, and delicately scented with strawberry aromas and flavors and an underpinning of minerality. Aging in 30% new Burgundian piece brings subtle notes of vanilla and spice. Les Lavières can mature early and offers excellent near-term drinking.

"An expressive and appealingly layered nose offers up notes of wild raspberry, red currant and plenty of earth character. There is a really lovely mouth feel to the medium-bodied flavors in large part thanks to the relatively fine-grained tannins that also shape the mildly austere, balanced and solidly persistent finish. This is a Lavières of finesse and while it will need a year or two to more completely harmonize it should be approachable young if desired." - (4/15/2014)

Given the wine's mid-weight structure, I would prefer to drink the 2012 over the next few years. " The 2012 Savigny-les-Beaune 1er Cru Les Lavieres comes from three narrow parcels of vine that neighbor those of Domaine Chandon de Braille. The nose is very refined and feminine, with the one-third new oak deftly assimilated. The palate is smooth and harmonious on the entry. This is very fleshy and pure with crisp tannins although it is not a powerful Savigny, rather one that is unashamedly dainty, light on its feet and very pretty.
