About the Winery:
Bibiana González Rave is the founder and winemaker of Cattleya Wines. Born and raised in Colombia and trained as a winemaker in France, she moved to California in 2007 and has been making exrtaordinary wines ever since.
About this Wine:
The Sun Chase Vineyard sits high atop a west facing slope in the southeastern portion of the Sonoma Coast appellation. Perched at an elevation that rests above the cool maritime fog layer and overlooks western Sonoma County, the dynamic microclimates of warm hilltops and cool swales make this unique vineyard an ideal site for elegant, complex Pinot Noir. Fruit for this wine was sourced from three high elevation blocks overlooking the southern portion of the Sonoma Coast AVA.

Winemaking:
Full extraction of color and flavor was achieved though twice daily punch downs by hand, as cold-soak through end of fermentation in tank lasted 21 days. Once dry, the wine was racked to 50% new French oak barrels where it aged undisturbed for 10 months before finally coming to rest in bottle without fining or filtration.

Tasting Notes:
The perfect combination of two distinct clones (50/50 of 777 and 667) has produced a Pinot Noir of unparalleled purity and depth of flavor. Enticing aromas of black cherry, baking spice and fig fill the air, as strawberry compote, plum, and Asian spice envelop the palate. In its infancy, this wine’s complex structure and bright acidity ensure a long life ahead.

"Coming from the Sonoma Coast, the 2019 Pinot Noir Belly Of The Whale is a more reserved, inward, and focused wine offering a beautiful blend of spiced red and black fruits intermixed with bouquet garni, crushed stone, and exotic spice-like aromas and flavors. More medium-bodied on the palate, it has a wonderful mid-palate, building yet perfectly ripe tannins, no hard edges, and a great, great finish. This is another remarkable wine from Bibiana González Rave. It will benefit from 2-3 years of bottle age and cruise for 10-15 years in cool cellars. Bravo!" (7/22/2021)
