About the Winery:
Bill Byington found Byington Steel Treating in 1950, now the largest business of its kind in northern California. In 1958, Bill and his wife Mary purchased 95 acres in the Santa Cruz Mountains with the intent of using it as a family retreat. In the early 1970s, a winemaker approached the family, wanting to lease part of their land for vineyards. Bill had been a wine collector and this implanted the seed for him to pursue viticulture. He planted 9 acres of Pinot Noir and Byington Vineyard & Winery was established with its inaugural release in 1987.
The Wine:
This Pinot Noir was grown in the high elevation and cool climate of the Santa Cruz Mountains on Byington Estate, finding the perfect terroir to bring vivid flavors of cherry & strawberry to life. 30% of the wine is aged in 1 year old French Oak barrels, adding a hint of toasty vanilla, and enhancing the light yet rich mouthfeel of this Pinot Noir. Whole clusters and 100% native yeast were used in fermentation, allowing this wine to fully exhibit all of the natural character that our unique region has to offer.
Byington's Estate in the Santa Cruz Mountains provided the perfect terroir for cultivating
this Pinot Noir, benefiting from the high elevation and cool climate. The resulting wine
boasts vivid flavors of forest strawberries, black olives, and earthy pomegranate,
complemented by French Oak's vanilla aromas and a rich, weighty mouthfeel. To fully
showcase the unique character of our region, we utilized whole clusters and 100%
native yeast in the fermentation process.
