About the Domaine:
In 1818, Nicolas François Billecart and his wife Elisabeth Salmon founded the house of Billecart-Salmon in Mareuil-sur-Aÿ, which now stands as the oldest continuously family-owned and operated house in Champagne. The estate is currently managed by the family’s seventh generation, brothers François and Antoine Roland-Billecart, while the cellars lie in the hands of Florent Nys.

After 33 years, François Domi has handed over the baton of Chief Winemaker to Florent, who has been working as an apprentice under the watchful eye of François since 2005, is now ready to take over the reins.

Notes from the Winery:
This wine, with an extra brut dosage, is dominated by great Pinot Noir flavors which are tempered by the elegance of the Chardonnay from the Côte des Blancs.

The wine is composed of
  • 65% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne (Mareuil-sur-Aÿ and Aÿ)
  • 35% Chardonnay from the Côte des Blancs (Avize, Cramant, Le Mesnil-sur-Oger, Oger, Chouilly and Vertus)
The Vintage Extra Brut in vinified in stainless steel tanks and goes through a partial malolactic fermentation. The wine is then aged on the lees for 9 to 10 years.

Significantly, this has nine years ageing on its lees (longer than some Prestige Cuvees), the 2008 was first released onto the global market back in March 2019. With an Extra Brut dosage of 4g/l, this is a highly expressive, confident and convincing interpretation of the vintage. Right now, it is youthfully sharp and focused with fine salinity, depth, acidity and balance, and as such is already extremely approachable. The flavour spectrum encompasses toast, oyster shell, citrus, cream and a flinty, mineral depth.
