About the Winemaker and Wine: 

Flagship appellation on one of the most famous terroirs of Layon, the union of producers of Quarts de Chaume has been able to impose the strictest production standards in France, in this case for the Quarts de Thatch, 17°5 minimum at picking, 25hl/ha maximum, without enrichment. Whether on the Brioverian (Breton shales) or on the Carboniferous, the Quarts-de-Chaume has a very strong aptitude for botrytising. The soils, without ever expressing vigor, do not cause the vines to suffer too much. This is only by preparing the load and an extreme quality of picking that the winegrower will be able to value the mesoclimatic potential of the Quarts de Chaume. At this level of work, we obtain finesse and complexity that only a beautiful overripe grape can give, with in return often lower yields at 15 hl/ha. Compared to Chaume (also on the Carboniferous), Quarts de Chaume has a nice liveliness aromatic, the palate is still marked by the "botrytisation/minerality" balance and by precision and freshness of the structure (contribution of phtanite from the Carboniferous).

Location: Top of hills with a southern slope.

Terrior: Carboniferous sandstone with coal, sandstone on alterite with cinerite and phtanite overweathering and rock.

Grape variety: 100% Chenin

Driving mode: Narrow Vineyards (5500 feet). Desuckering and manual thinning in June and July. Grassing of the inter row.

Phyto-sanitary protection: Trace elements, seaweed, Cuivrol  and plant extracts.

Harvest: Manual, by successive selections.

Vinification: Slow pressing, long fermentation without seeding. Aging in barrels.
