An early picking insures a higher acidity and a more floral bouquet. The grapes are crushed immediately to avoid any oxidation which might detract from the wine's aromas. The grapes are gently crushed and the juice is settled, centrifuged and filtered. The purified musts are placed in stainless steel tanks and held at near freezing temperatures which blocks completely any fermentation. This enables the producers to draw batches of fresh must whenever they decide to bottle. The batch of must is then inoculated with special yeast and fermented in an autoclave to retain the naturally produced carbon dioxide. The fermentation is stopped by a rapid chilling when the wine reaches the desired ratio of alcohol (the standard is 7%) to residual sugar ( 3-5% ). The wine is then filtered, bottled and, at Toso, immediately shipped to ensure the freshest product possible.

What Does It Taste Like?

Fresh, a floral bouquet, a sweet, fruity taste.
Excellent as aperitif, best enjoyed with fruit, dried pastries and desserts in general.

Thorn Clarke "First Light" Moscato N.V. The second or deeper cellar maintains a constant 9.5º C (50º F), one degree lower than the first level and most others in the region. This lower temperature slows the second fermentation, encouraging a finer mousse or bubbles. To accomplish this, a small amount of cane sugar and yeast are added to the base blend on its way into bottle. Inside the capped bottle, the yeast will consume the sugar and create carbon dioxide necessary for bubbles. Trapped inside the bottle, the carbon dioxide slowly infuses into the wine to create the fine sparkle known the world over.

Since the beginning, while not required, approximately 80% of our wine undergoes malolactic fermentation. This secondary fermentation converts malic acid, the tart acid found in a green apple, to lactic acid, the soft creamy acid found in dairy. This technique is a signature of the Scharffenberger style and contributes to the rich and creamy texture of our wine.

Every year, through fractional blending (also known as solera) the reserve wine adds a new chapter to the story of Scharffenberger Cellars. On average, 12% of reserve wine is added to our non-vintage blends, which helps define the classic and consistent flavors and aromas of our sparkling wines. This added layer of complexity ensures that our wines tell the story of our past and current vintages. A portion of the reserve wine is also used in our dosage following disgorgement.

To further the depth of texture, flavors and aromas, every bottle ages a minimum of 24 months on the lees before leaving the winery. His father had been producing estate bottled wines since 1964 and joined the Club Trésors in 1985 Jean-Paul has slowly developed the estate in the last 20 years to one of the very finest grower estates in the Marne. The basis for these outstanding wines are the privileged holdings in Aÿ, including the newly purchased plots in Le Léon, Mareuil-sur-Aÿ, and Dizy in the Grande Vallée as well as Avize, Oiry and Chouilly in the Côte and recently acquired vineyards in Louvois in the Montagne. Jean-Paul harvests, presses and vinifies each of his over 85 plots separately, blending sites to make harmonious wines which reflect the personality of the grower as well as the terroir. A majority of the wines are fermented in steel, though old used barrels have become a part of his program for Rive Gauche-Rive Droite and his new wine, Clos de Léon, both of which are fermented and aged in neutral barrique.

The Hébrart wines are truly of both place and person, the kind, welcoming and generous qualities that Jean-Paul Hébrart exudes can be seen in all of his Champagnes. When Nicolas Francois Billecart married Elisabeth Salmon in the early 1800s, the two families' long held vineyards were married as well. This led to Nicolas' decision to leave his law practice and take over the family wine estate. In 1818 he founded the house of Billecart-Salmon which now stands as the oldest continuously family owned and operated house in Champagne. It is currently managed by the seventh generation, Mathieu Roland-Billecart. The cellars are in the hands of "chef de cave" Florent Nys, who has worked under previous chef de cave Francois Domi since 2005.

One of the most distinctive aspects of Billecart-Salmon is their philosophy that an early harvest yields more elegant and delicate champagnes. They look for a strong acid structure rather than alcohol as a preservative and therefore, never harvest at higher than 10 degrees of potential alcohol.

Notes from the Winemaker:
The production secrets and the vinification method of this cuvee go back to the origins of the House of Billecart-Salmon and have been handed down for seven generations. A classic pink salmon hue, the nose is classic and pretty with notes of fresh peaches, raspberries, roses, and chalky earth. Medium-bodied and rounded, it’s approachable and fresh in style, with lovely purity and a pretty feel throughout. It’s delicious now but has the ability to age with ease over the coming 10 years.
