An early picking insures a higher acidity and a more floral bouquet. The grapes are crushed immediately to avoid any oxidation which might detract from the wine's aromas. The grapes are gently crushed and the juice is settled, centrifuged and filtered. The purified musts are placed in stainless steel tanks and held at near freezing temperatures which blocks completely any fermentation. This enables the producers to draw batches of fresh must whenever they decide to bottle. The batch of must is then inoculated with special yeast and fermented in an autoclave to retain the naturally produced carbon dioxide. The fermentation is stopped by a rapid chilling when the wine reaches the desired ratio of alcohol (the standard is 7%) to residual sugar ( 3-5% ). The wine is then filtered, bottled and, at Toso, immediately shipped to ensure the freshest product possible.

What Does It Taste Like?

Fresh, a floral bouquet, a sweet, fruity taste.
Excellent as aperitif, best enjoyed with fruit, dried pastries and desserts in general.

Poderi Aldo Conterno Barolo Riserva "Granbussia" DOCG 2009 (Piedmont, Italy) - [RP 97] [DC 97] [WS 95]

Notes from the Winemaker:
The Barolo Reserve Granbussia is produced by blending grapes from the oldest vines, from the Romirasco, Cicala, and Colonnello, before fermentation starts, in the following percentages respectively: 70% - 15% - 15%. The Granbussia narrative is one of elegance and refinement. The fruit comes from two vineyard parcels in the greater Bussia cru and was co-fermented (instead of being blended after malolactic fermentation). So much fruit was dropped during the summer growing cycle that the harvest came later than usual. Its terrain originated in the Tortonian-Messinian era; rich in calcareous clay and magnesium, manganese and zinc, it is made of very fine particles that tend to form layers (silty marls) – therefore highly erosive. Vines are Guyottrained, exposure is southerly, and average altitude is 280 meters, i.e. approx. 920 feet. Grapes are harvested in early to mid-October. After severe selection, fruit is de-stemmed and softpressed. Maceration on the skins lasts 12 days in stainless steel vats, at a controlled temperature. Malolactic fermentation is completed before the end of winter, and the wine is aged in mediumtoasted French barriques for 12-15 months, then in 2nd-year 25-hl. oak barrels for several more, totaling 2 years in wood. After this period, it is transferred to stainless steel vats to rest 3 months before bottling, then bottle-ages a further 10 months before release, unfiltered and unclarified. Its name, “Hill of Violets”, originates from the flowers that blossom early, thanks to the perfect south exposure. Up above the fogs, Bricco delle Viole enjoys the earliest sunrise and the last sunset every day. Thanks to this pure light, a dramatic diuturnal temperature range and the age of its vines dating back to 1931, Bricco delle Viole generates a profound Barolo of bright aromatics, chiseled tannins and subtle minerality.

Technical Information:

VARIETY: 100% Nebbiolo.

VINEYARD AND TERROIR: Bricco delle Viole MGA, Comune di Barolo.

GROWING: 2020 is a truly remarkable vintage and one of the longest of the decade.
It started off with an anticipated bud break and slowed down throughout spring
and summer, resulting in a late harvest. An abundant flowering, from May 12th, set the stage for perfumy, aerial and redtone dominated wines. Numerous rainfalls, well into July, resulted in a less regular fruit set, much more work in the vineyards, but also milder temperatures, leading to an estimated vegetative cycle of 213 days. Great aromatics, varietal authenticity and gorgeous tannins are the signatures of 2020.

HARVEST AND WINEMAKING: In 2020, fruit was harvested over three days, on October 7th, 10th and13th. Initially lightly smoky on opening, it needs a little time to reveal notes of candied roses, wild raspberries, tea leaf, and sweet sage. Medium to full-bodied, with ripe tannins, a balanced, compact nature, and a velvety texture, it is nicely concentrated, yet with a weightless feel. This is one of the most complete wines I’ve tasted from Vjara to date. It has depth, but with a defined feel, and is long on the palate, with an exceptional finish. It’s going to have a wide drinking window but age at a very slow rate over the next two to three decades. The G.D. Vajra estate is based within the commune of Barolo, with the entire family contributing and Giuseppe and Aldo Vajra at the helm of the winemaking responsibilities. Giuseppe, who took more of a leadership role in 2008, has been instrumental in continuing to develop the family estate, while Isidoro Vajra leads in vineyard management. Most recently they have completed the expansion of their cellar space and offices. They are also now releasing their wines a touch later to allow for additional time in bottle to soften any harsh edges. As of the 2019 vintage, both the G.D. Vajra and Luigi Baudana estates are certified organic.
